Our Bakery

Farine in Marblehead

After starting out by selling at area farmers markets, Farine has opened its first brick & mortar location at 146 Washington Street in downtown Marblehead! Located at the corner of Washington & Darling streets, our bakery is now open Wednesdays through Saturdays from 7:30am to 2pm and on Sundays we are open from 8am to 2pm.

Make sure to come early! We bake our products on-site in small batches. So, when the bread sells out, we close up shop!

All of our loaves, rolls and baked goods are made with using a combination of high quality local ingredients and authentic French ingredients. We also sell coffee and tea to go.

Since opening our location in the late spring of 2025, we have been overwhelmed with the welcome and support from the Marblehead community! While we don’t have the space yet for the complete French boulangerie experience (a sit-down cafe), we are thrilled when we open our doors in the early morning to find customers waiting.

Our Process

What it means to be an authentic French Boulangerie

In France, a Boulangerie is defined as a bakery that makes all of its products on the premises. Laurent Dedieu, Farine’s principal bread baker, is a licensed boulanger who has combined his formal training with his upbringing in France’s Occitane region. It might mean waking up at 3am, but it’s worth it to bring authentic French bread to Farine customers’ tables.

Baguettes & Traditional Loaves

For many the baguette is their first taste of authentic French bread. Farine uses a traditional French bread-making process with levain (natural sourdough) which involves building a healthy wild yeast culture, mixing it with flour and water through an autolyse phase, kneading, bulk fermentation with strategic folds and a cold retard to develop flavors, shaping into loaves by hand, and baking at high heat with steam for a crisp crust.

In addition to baguettes and loaves for sliced bread, Farine also makes Fougasse, a provincial “pull-apart” bread made with olive oil and savoury ingredients such as cheese, herbs and olives

Brioche & Viennoiserie

While baguettes and loaves are made using only flour, water, salt and yeast as their principal ingredients, there are other varieties of French baked goods available at Farine. A brioche is a roll or loaf that has a light, slightly sweet taste and is made using wheat flour, eggs, butter, milk, sugar, honey, fresh yeast and salt. Viennoiserie are baked goods that get their light and airy texture from yeast and not butter which differentiates them from “pastry”. Croissants are a type of viennoiserie that have a laminated dough and they get their name from being formed in crescent shape before baking.
